Honey Infused Ginger

Every few weeks we peel, chop & pound with  the mortar & pestle a heap of ginger for health brews, cooking & for our cup of ginger tea twice a day. The honey is a wonderful preservative & is made in an  instant by adding boiling water for ginger tea. This week we did two kilos of honey with one kilo of ginger, which is time consuming, but it is really worth it for the benefits. 
We do the same process with garlic in large amounts, but in cold pressed olive oil instead of honey.
